Shredded Brussels Sprouts

Rainbow over Bow River valley, Banff Alberta Canada

8 oz. thick sliced bacon, coarsely diced
2 lbs. Brussels sprouts, stems trimmed
Caesar garlic salad dressing

Shred Brussels sprouts stem side down on a mandoline slicer.  In large skillet over medium heat, rend bacon until crisp.  Remove bacon from skillet with slotted spoon and drain on paper towel, retaining rendered grease in skillet.  Add Brussels sprouts and sauté until tender-crisp.  Stir in Caesar dressing to taste.  Just before serving, stir in bacon.  Serve warm.
